Almost Done!




Well I officially just attended my last class at USU. To say I am excited would be a huge understatement! Now I just have 6 finals next week, which is a little bit of a downer, but what can you do? Josh and I both graduate next Saturday and then we are moving on the bigger and better things!

WOoHOO!! Congrats, Annie...I bet it feels so good to be done :) Hey, I'm totally slow, but I'll put the recipe below. It'll take up a lot of space on here--but totally worth it! ;)

Bruschetta Chicken
1/2 c. flour
2 lightly beaten eggs
4 boneless, skinless chicken breasts
1/2 c. grated parmesean cheese
1/4 c. dry bread cumbs (I use crackers too)
1 T melted butter
1 can of oregano, basil, garlic diced tomatoes, or dice and season a couple tomatoes

1. Place flour and eggs in separate shallow bowls. Dip chicken in flour, then in the eggs. Place in a greased baking dish.
2. Combine parmesean cheese, bread cumbs, and butter. Sprinkle over chicken.
3. Loosely cover baking dish w/ foil. Bake at 375* F for 20 minutes. Uncover, and bake for 5-10 more minutes until top is browned.
4. Then spoon the diced tomatoes over the chicken and return to the oven for 3-5 minutes. Then ENJOY!!

Congrats soon-to-be college grad! IT's a huge accomplishment. When our COM-D class graduated we decided to sign thanks and love to our family in ASL when we each got up to accept our diploma. It was really cool, and my mom said she teared up at that. Get your class to do it, if they don't already have it planned.
